Walnut Crusted Salmon

Ingredients:

2 Fresh wild caught Tasmanian salmon fillets
1.5 c chopped walnuts
4 Tbl. gluten free breadcrumbs (or almond meal)
2 Tbl. dijon mustard
1.5 Tbl olive oil
1.5 Tbl. fresh dill
2 -3 Tbl. lemon zest and juice for later
Assorted roasted vegetables

Instructions:

Pre-roast vegetables of your choice. Combine walnuts, breadcrumbs, olive oil, dill and lemon zest. Spread fish with dijon mustard, coat with walnut/breadcrumb mix and bake for approx. 15 min. at 180 C or until cooked through. Squeeze over some lemon juice and serve.
