Sweet Potato Burgers
Ingredients
1 can organic chickpeas, drained and rinsed
1 sweet potato, medium-sized, baked
1 tsp cumin
1 tsp veg stock powder
1 clove garlic, minced
½ teaspoon salt
¼ cup homemade BBQ sauce
¼ cup organic cornmeal
¼ cup green onions, chopped
Barbecue Sauce
3/4 c organic tomato paste
¼ cup water
2 tablespoons pure maple syrup
2 tablespoons apple cider vinegar
½ teaspoon chili powder
½ teaspoon garlic powder
¼ teaspoon salt
Preheat oven to 190˚C. Peel the cooked sweet potato, and add it to a bowl with chickpeas, along with the garlic, chili powder, and salt. Mash until chickpeas are smooth. Add the cornmeal and green onions, and set aside.
BBQ Sauce: In a medium-size bowl, combine organic tomato paste, water, maple syrup, apple cider vinegar, chili powder, garlic powder, and salt. Mix to combine.
Add a little barbecue sauce to the mashed chickpea mixture and mix until thoroughly combined. Roll and press into patties from the mixture. Place onto a sheet pan with baking paper.
Bake for 30-40 minutes, or until lightly browned, turning over halfway through. Serve with the rest of the barbecue sauce and favorite toppings! Soooo good!
