Quinoa Broccoli Patties

Ingredients:

1 c quinoa (pre-soaked and rinsed if possible)
1 1/4 c water or vegetable broth (for more nutrition and flavour)
1/2 tsp lemon rind
1c broccoli florets, steamed
2 free range eggs
1/2 c low salt cheese (our favourite is Norco Natural cheese) or can use vegan cheese for dairy free
1/4 c - 1/2 c GF breadcrumbs or almond meal
Your choice of herbs - parsley, basil, thyme etc

Boil quinoa until cooked well (and dry). Steam broccoli separately. Once quinoa and broccoli are cooked, combine all ingredients with together. Form into flat patties. You can add more or less of the breadcrumbs or egg to ensure a sticky but dry consistency (they should stay in shape). Cook with a little coconut oil for a few minutes on each side until golden brown. Delish!
