Paleo Museli
Ingredients
1 1/2 c raw almonds
1/3 c sunflower seeds
1/3 c pumpkin seeds
1/8 c sesame seeds or hemp seeds
1/8 c linseed (flaxseed)
1/4 c coconut flakes
1/4 c coconut oil
1 tsp vanilla
3 tsp cinnamon
Pinch of salt
1/4 - 1/3 c honey or maple syrup
Instructions
Preheat oven to 130 degrees C. You can pulse the seed/coconut mixture in a food processor very quickly if you like a finer muesli or leave nuts/seeds whole for a crunchier mix.
Heat your coconut oil, syrup, cinnamon and salt in a pan over medium heat for about 4-5 minutes. Remove from heat and mix in vanilla and the nut/seed/coconut mixture. Stir to coat evenly.
Spread muesli across a parchment lined baking sheet. Bake for 15-20 minutes or until lightly browned. Allow to cool completely, break up into pieces and store in a jar in the fridge for about 10-12 days.
