Roasted Beetroot, Walnut and Feta Salad

Instructions 
6 medium beetroots
1 1/2 c walnuts, chopped
1 pack quality feta cheese
2 c rocket, washed

Dressing
1/4 c organic balsamic vinegar
3/4 c organic olive oil
1 heaped tbl of seeded mustard
1 tsp Dijon mustard
1 crushed garlic clove 
1-2 tbl honey to taste
Pinch or salt/pepper

Instructions
Pre-roast beetroots in the oven (you can wrap them in recycled aluminium foil first to keep the moisture in if your oven runs hot).
Once cooked and soft, cool then assemble the salad with rocket, walnuts, crumbled feta and beetroot. Drizzle the dressing over the goods and you will be in salad heaven!
