Mexican Taco Soup
Ingredients:
400ml organic vegetable stock
800g organic diced tomatoes (can use 2 organic canned if you are in a hurry)
800g soaked, cooked beans such as kidney, white or black beans (can also use 2 organic canned)
1 diced sweet potato
1/2 brown onion, diced
1 garlic clove, crushed
2 ears of organic corn, shaved
2-4 tbl Mexican spices (chilli, cumin, garlic, oregano, onion, paprika etc) depending on how spicy you like it. You can also use a good quality reduced salt taco seasoning.
Salt and pepper to taste
This truly is a one pot wonder, just whack all ingredients in a big pot and boil until ingredients are soft! Top with a spoonful of natural pure free or coconut yogurt, avocado, coriander, hemp seeds and some organic corn chips and you’re good to go!
