Baked Sweet Potato Chips
Ingredients:
2-3 organic sweet potatoes
1 tbl organic, non GMO corn starch (optional - but this is what makes them crispy!)
2 tbl organic olive oil
Salt, pepper, herbs and spices (paprika, garlic or rosemary works well)
Instructions:
Preheat the oven to 190 degrees C. Peel the sweet potatoes and cut them into evenly cut fry-shaped pieces. Toss the uncooked fries into a mixing bowl or onto your baking sheet. Sprinkle with cornstarch (if using) and pour in the olive oil and mix well. Season with salt, pepper, herbs or spices.
Pour the fries directly onto a dark, ceramic or lined baking sheet. Space them out evenly to cook better. Bake for 15 minutes, then flip the fries so they can cook on all sides. Bake for 10 to 15 more minutes, or until the fries are crispy. You’ll know they’re done when the surface of the fries change from shiny orange to a more matte, puffed up texture.
